Combine

24 Graham crackers (crushed)
1/3 cup sugar
1/2 cup butter or margarine
Press into 9 x 13″ pan

Mix:

2 beaten eggs
3/4 cup sugar
8 oz cream cheese
Pour over crust and bake at 350 for 20 minutes

Cook:

2 cups pumpkin (canned)
3 egg yolks
1/2 cup sugar
1/2 cup milk
1 tsp. salt
1 T cinnamon

Cook until thickens. Remove from heat. Add to pumpkin mixture 1 envelope plain gelatin dissolve in 1/4 cup cold water. Let cool.

Beat 3 egg whites
1/4 cup sugar
Fold into pumpkin mixture
Pour mixture over the baked crust/cream cheese and refrigerate until it sets (usually overnight in the fridge). Top with Cool Whip!

Ingredients:

6 eggs
3 cups brown sugar
2 cups granulated white sugar
1 Tbsp. vanilla extract
1 cup (2 sticks) butter, softened
3 cups creamy peanut butter
9 cups oatmeal (must be old fashioned rolled oats)
2 cups plain M & M’s
2 cups semisweet chocolate chips
4 tsp. baking soda

What to do:

1. Cream eggs, butter, sugars, vanilla, and peanut butter.
2. In a separate bowl; mix oatmeal, M&Ms, chocolate chips, and baking soda.
3. Combine dry ingredients with creamed mixture and mix well.
4. Drop by large scoopfuls on to cookie sheet.
5. Bake at 350 degrees F for 12 minutes.

Easy Crockpot Chicken

It’s that time of the season for Crockpot cooking! This easy crockpot chicken breast recipe is made with Swiss cheese, cream of mushroom soups, stuffing mix, butter and cream of chicken soup.

Ingredients:
4 boneless chicken breast halves, without skin
4 slices Swiss cheese
1 can (10 1/2 ounce) condensed cream of chicken soup
1 can (10 1/2 ounce) condensed cream of mushroom soup
1 cup chicken broth
1/4 cup milk
1 bag Pepperidge Farm Sage and Onion Stuffing Mix
1/2 cup melted butter (you could use half this if you want)
salt and pepper to taste

Preparation:
Season chicken breasts with salt and pepper; place chicken breasts crock pot. Pour chicken broth over chicken breasts. Put one slice of Swiss cheese on each breast. Combine both cans of soup and milk. Cover chicken breasts with soup mixture. Sprinkle stuffing mix over all. Drizzle melted butter on top. Cook on low for 6-8 hours.

This weekend we had a valentine’s day party with the kids and made cupcakes with homemade frosting. I found this recipe and did some tinkering and here’s what I came up with:

Ingredients

  • 1 cup of salted butter
  • 3  teaspoons of vanilla
  • 4 cups of icing sugar
  • 4-5 tablespoons of  half and half (4 seems to be good)

Directions

  1. Mix room teperature butter with an electric mixer.
  2. Add sugar one cup at a timeand mix
  3. Add vanilla and mix
  4. Add half and half and mix until smooth and creamy.
  5. Add the die

Easy Banana Bread Recipe

Got some bananas that are too mushy to eat? Got a hankerin’ for a hunk of bread that’s tasty and sweet? Well, how about some delicious yummy banana bread? It’s quick and easy and fun to eat!

Ingredients:

1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup granulated sugar
2 large eggs
1 1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans

Directions

  1. Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
  3. Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

Trader Joe's Pumpkin Pancakes

Trader Joe's Pumpkin Pancake and Waffle Mix

These are the most delicious homemade pancakes. Well, they really are not homemade because they come out of the Trader Joe’s Pumpkin Pancake and Waffle Mix box. The pancakes are super easy to make and yummy as can be. You must serve with whip cream. Olivia loves ’em.

Cinnamon Mocha Coffee

Tried this recipe last Friday. Left some of the grounds in the grinder and had nutmeg, cinnamon coffee for the morning. Definitely a keeper.

Preparation time: 20 minutes

You Will Need
1/2 cup ground dark roast coffee
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
5 cups water
1 cup milk
1/3 cup chocolate syrup
1/4 cup packed brown sugar
1 teaspoon vanilla extract
Whipped cream, optional

What to Do
1. In a small bowl, combine the coffee grounds, cinnamon and nutmeg; pour into a coffee filter of a drip coffeemaker. Add water; brew according to manufacturer’s directions.

2. In a large saucepan, combine the milk, chocolate syrup and brown sugar. Cook over low heat until sugar is dissolved, stirring occasionally. Stir in the vanilla and brewed coffee. Ladle into mugs; garnish with whipped cream if desired.

Serves 6

Sugar cookies

First time making sugar cookies. These are so yummie especially with the butter cream frosting! If you love frosting you’ll need to double or triple the frosting recipe for these.

Ingredients

  • 1 1/2 cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Directions

  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.

  • 1     cup 2% milk
  • 1/2     cup sugar
  • 1/4     cup brown sugar
  • 1 1/2     tablespoon instant coffee
  • 2     cups heavy cream, well chilled
  • 1     teaspoon vanilla extract

Directions

1. Place milk, sugars, and espresso/coffee power in a medium bowl. Mix until sugar is dissolved.
2. Stir in cream and vanilla to taste.
